Cull Yaw Köfte with Grilled Apple Sauce

Cull yaw is a type of free-roaming, retired mutton, coined by Matt Chatfield, the founder of the Cornwall Project (see last week’s newsletter for more on that).

Due to the strong smoky nature that mangal imparts on meats, we devised a sauce that would act as a subtle counterpart. A sauce like ketchup but made from grilled apples was ideal. Sweet, tart and smoky, this impactful condiment is the perfect alternative to classic Turkish sauces. You can use it to accompany gamey or heavy meat flavours.
