As one of the most famous names in barbecue, Hugh Mangum knows a thing or two about pulled pork, a true classic of American barbecue culture. To mark the release of his new book Barbecue: Smoked and Grilled Recipes from Across the Globe, we asked Hugh to dive into one of the most famous barbecue dishes there is.

Below is his recipe made with North Carolina Barbecue sauce.

PULLED PORK (UNITED STATES)

Pulled pork is to North Carolina what beef brisket is to Texas. Whether it comes from a whole hog, a shoulder, or a bone-in pork shoulder (or Boston butt), pulled pork is the language of love in North Carolina. The combination of smoke, meat, bark, and vinegar mop sauce is one of the pinnacles of American barbecue.
